Henry's 1,2,3 Fondue!

makes 6-8 servings

1 lb. Gruyere cheese grated

3/4 1lb Emmenthal cheese grated

1/4 tsp. cayenne powder

6 teaspoons of cornstarch

2 tsp. dry mustard

2 gloves of garlic minced

2 1/2 cups of dry white wine

3 tablespoons of Kirshwasser

Add wine and garlic into fondue pot...as you wait for this to almost boil (you don't want it to fully boil..but close..perhaps a hefty simmer is a better way of describing it)...combine grated cheeses and toss with cayenne powder and constarch..when the wine and garlic are at the almost boiling point..add cheese mixture a half cupful at a time to wine...stirring constantly with a wooden spoon...wait until the 1/2 cup is well integrated into the wine mixture before you add another (I once threw in all the cheese and made quite a little mess!)...once all the cheese is in the pot and melted...add your Kirshwasser...adjust flame accordingly...making sure the fondue simmers but never boils..cube up some crusty bread and dip...yum, yummmmmm!!!
